Stuffed Roasted Onions

Ingredients
6 small Onions, top and bottom cut off
1 slice Lo Carb Bread
1/4 cup Parmesan cheese, finely grated
1 clove Garlic, minced
Salt and pepper, to taste
1 tsp rosemary
1 tbsp olive oil
Preparation
1. Take 6 onions, removing a small piece on the top and bottom. The top is for later, the bottom is so they will sit straight. Remove the skin. Put the onions in oven on 325F/180C for approximately 20 minutes.

2. Remove and let cool. Using a sharp tipped knife, cut out a piece form the top of the onion, like a divet on a golf couse. Set out the removed piece.

3. In a food processor, blitz a piece of low carb bread until it is finely crumbed. Chop finately the onions you removed from the center of the 6. Fry up the onion and the breadcrumb with a bit of olive oil. When the bread begins to brown, put in a bowl and add the cheese.

4. Wrapping a strip of ham or bacon around the onion, secure using a toothpick or a rosemary branch.. Put a spoonfull of the mixture into the hole you have cut from the onions. Place the onions in the small oven proof pan.

5. Cook for 20 more minutes or until the cheese melts and starts to bubble.
