1 1/2 lb sirloin steak 1/4 cup butter 1/4 cup heavy cream 3 tbsp brandy 1 tbsp Dijon mustard 2 tbsp Worcestershire sauce salt and pepper, to taste

Preparation |
Cut steak into 4 pieces. Place each between 2 sheets of wax paper or plastic wrap and pound until thin, about 1/8th" thick. Heat 2 tablespoons of the butter in a large, heavy skillet over medium-high heat. Sauté the steak, in batches if necessary (do not over crowd), for about 45 seconds on each side. Transfer the steak to a serving plate and keep warm. >> Add the remaining butter, cream, cognac (brandy) mustard, Worcestershire sauce, salt, and pepper to the skillet. Bring to a boil, lower the heat, and simmer the sauce for 3 minutes, making sure to scrape up any brown bits from the bottom of the skillet.
