Sirloin Steak With Cognac Mustard Sauce

Ingredients
1 1/2 lb sirloin steak
1/4 cup butter
1/4 cup heavy cream
3 tbsp brandy
1 tbsp Dijon mustard
2 tbsp Worcestershire sauce
salt and pepper, to taste
Preparation
Cut steak into 4 pieces. Place each between 2 sheets of wax paper or plastic
wrap and pound until thin, about 1/8th" thick. Heat 2 tablespoons of the
butter in a large, heavy skillet over medium-high heat. Sauté the steak, in
batches if necessary (do not over crowd), for about 45 seconds on each side.
Transfer the steak to a serving plate and keep warm. >> Add the remaining
butter, cream, cognac (brandy) mustard, Worcestershire sauce, salt, and pepper
to the skillet. Bring to a boil, lower the heat, and simmer the sauce for 3
minutes, making sure to scrape up any brown bits from the bottom of the
skillet. Pour the sauce over the steak and serve immediately..

This elegant dish can be prepared in only fifteen minutes. It makes the perfect romantic dinner entree for two. Sorry about the photo, odd color to it for some reason.
