Sage Lemon Stuffed Chicken

Ingredients
16 oz chicken breast, (4 x 4oz breast)
2 cloves Garlic, crushed
2 tsp Sage (If using fresh, use your judgement)
1 cup ricotta cheese
2 tsp Lemon zest, chopped finely
4 oz Harvarti cheese, shredded
1 tbsp Oil
Salt and pepper, to taste
Preparation
1. Take 4 good size chicken breast. Pat dry. Take a small knife and cut a small slit in the large end of the breast, moving the knife tip to cut the length of the chicken. What you are doing is cutting a small pocket into the chicken while not cutting through the chicken. Repeat on all breast, set aside.

2. Combine ricotta, garlic, sage leaves, crushed garlic and havarti cheese into a bowl. Mix together.

3. Using a small spoon, or if you have it, a piping bag, push 1/4 of the mixture into each breast. If you use a piping bag, insert the tip, making sure to fill the end, then turning the tip up the breast, you want to ensure that it is filled evenly.

4. Rub Olive Oil on breast, salt and pepper. Sear the chicken on high heat, lower to medium heat and continue to grill about 8 minutes each side. Salt and pepper to taste.

Note
If you are doing this for fancy dinner, I would suggest wrapping the chicken in smokey bacon.
