2 medium Turnips, shredded
1 tbsp Mustard, whole grain
4 tbsp Basil, and chives (1/2 cup)
1 cup Mozzarella, shredded
1/8 cup soy mayo
Salt, to taste
Pepper, to taste
Vegetable oil, (to fry the cakes)


Spinach leaves
1 medium Tomato, roma
1 medium Avacado, sliced
1/2 small Onion, red, sliced
1. Squeeze as much moisture as you can grom the grated turnip and sweet potato. Place them both in a bowl.
2. Add the mustard, herbs, mozzarella, and soy mayo. Add seasoning then stir well to combine.
3. Heat oil in a large fryaing pan and cook 1/4 cup batches of the mixture.
4. Remove and drain on paper towel. Make sure to drain well.
5. To put on a plate, you place a cake down, then tomato slice, then spinach, then avacodo....you get
the drift. If the flavor was not enough, you could put on some dressing if you wanted.
Per Serving: 248 Calories; 15 g Fat; 8 g Sat Fat; 48 mg Cholesterol; 368 mg Sodium; 17 g Carb; 6 g Fiber; 13 g Protein.

Had to dig for this. I have had them, seen them but had to search to find out where they came from. They are swiss potato cakes. We, of course are going for the turnip, or maybe pumpkin.
