Lobster Toast

Equipments broiler pan; Food Processor; grater; measuring spoons; Mixing Bowl

4 oz Lobster meat, broken into pieces
3 oz Parmesan cheese, finely grated
1/2 stick Butter
1 1/2 tsp Garlic powder, (don't confused w/ garlic salt!!)
1 tsp Dill
1 tbsp Dijon mustard, (less if you do not like spice)
8 slices Low Carb bread, (we use Carb Counting from Atkins)

1. Place all ingredients (except bread) into a bowl, or if you are lazy, like me, add to a food processor. Pulse or use a fork to mix thoroughly. Split into 8 parts and spread on slices of low carb bread.

2. I like to put a tomoto slice on top. That is optional.

3. Place under broiler until it starts to brown on top. The cheese will start to bubble. If serving as apetizers, you can cut into fours.

Counts do not include bread. Ensure you add that when figuring.

Per Serving: 195 Calories; 13 g Fat; 7 g Sat Fat; 112 mg Cholesterol; 370 mg Sodium; 2 g Carb; 0.55 g Fiber; 17 g Protein.
