|1 pound chicken breast, (4 breast)
1 large Red bell pepper, cut into strips
2 medium Red chile, minced
2 cans Tomato, chopped
3 cloves Garlic, minced
1 tbsp Basil, shredded
1 tbsp Coriander, chopped
4 oz Mozzarella, shredded
Salt & pepper, to taste
|1. In a skillet, add a touch of Olive Oil, cook chicken until almost done, still pink inside.
Set aside. Add to the skillet the crushed tomato's. garlic, onion, and hot peppers, and
corriander. Cook until veggies soften. Set aside.
2. In a casserole dish, layer chicken then sauce, put Red Bell pepper over chicken,
then cheese on top. Drizzle with a bit of olive oil.
3. Bake at 350F/180C until chicken is cook through and cheese is melted. About
20min. About 3 minutes prior to removing the chicken, put basil over chicken.
