Beef Quesadillas

Ingredients
2 tbsp Vegetable oil, divided
1/2 small Onion, chopped
1 lb Beef, cooked, cut into very thin strips
1 cup Monterey jack cheese, shredded
1 Jalapeno, dfinely chopped
1/4 cup Cilantro, chopped
1/2 tsp Pepper
1/4 tsp Salt
8 Tortillas, low carb
Preparation
1.Heat oven to 450f. Heat 1 Tablespoon oin in a large skillet over medium-high heat.
Cook onion 5 minutes, until softened. . Transfer to a bowl and add beef, cheese, jalapeno,
cilantro, pepper and salt. Mix well.
2. Brush one side of each tortilla with remaining oil. Spoon one eighth of the beef mixture
over half of non-oiled side. Fold in half over filling.
3. Arrange on a baking sheet. Bake 5 minutes, until crisp and golden. Serve while hot
with your favorite toppings.
