16 oz chicken breast, boneless (4 x 4oz breast) 1 cup Water 3/4 cup Vinegar 8 tbsp Soy sauce, (1/2 cup) 2 medium Bay Leaf 3 cloves Garlic, crushed Pepper, to taste
1. Mix everything but the chicken together in a bowl.
2. Trim extra fat off chicken breast and put into marinade bowl with mixture. Put in refrigerator for at least 3 hours and not longer than 24 hours.
3. You can cook this two ways. If you simmer it in the mix, you bring to a boil, then drop to a simmer for about 20 minute or until the chicken is done. If you grill, put on direct heat for about 8 minutes per side or until done. ______________________________________________________________________ Per Serving: 423 Calories; 28 g Fat; 5 g Sat Fat; 96 mg Cholesterol; 2097 mg Sodium; 4 g Carb; 0.41 g Fiber; 39 g Protein.
The counts above are a bit skewed. I could not figure out how to correct the salt, you are not going to drink the marinade. The carbs are correct though. On the marinade time, we as a family like about 3 hours. It gets to strong when left longer. Your call now. :-)
